Back in December of 2017, Nick started writing a monthly reflection about the farm, charting the seasonal changes, the mundane chores, every day farm life, and his ponderings. This Fall we're seeing what we can do with quince. We have ~50 quince trees of several varieties on the farm. They're still young and will come into full production in a couple more years. They smell amazing, but their juice was really tart....we'll see how this ferments. We may have a small batch on tap next season?
