Experimenting with Quince!

This Fall we're seeing what we can do with quince. We have ~50 quince trees of several varieties on the farm. They're still young and will come into full production in a couple more years. They smell amazing, but their juice was really tart....we'll see how this ferments. We may have a small batch on tap next season?
